Bo Le Fan Zai Lou ('The Boss's Mansion') is a beautifully restored qiaoxiang villa - the ornate house of an overseas-Chinese merchant - now run as a restaurant that celebrates Quanzhou's hybrid culture: Chinese, Southeast Asian, and global.
The menu covers the city's greatest hits - ginger duck, oyster omelets, and the sweet-savory stews of the Min Nan coast - and the villa's mosaic floors and carved lintels make dinner feel like a party in a museum.
