Tianjin's most famous steamed buns - eighteen folds per bun, and a story to match.
Goubuli means 'dogs don't care', the nickname given to the 1858 street vendor whose buns were so good the dogs were ignored. The buns are still made with eighteen precise folds, filled with pork, seafood, or vegetables.
Order a sampler basket and a bowl of millet porridge. It is more tourist pilgrimage than hidden gem, but the folds are real and the steam is honest.
Best for: The iconic Tianjin steamed bun, folded eighteen times by hand.
